Our Perfect Zesty Chicken Tortilla Bake
1/2 c. miracle whip dressing
1/2 c. flour
3 c. milk
2 c. cheddar cheese, divided
1 1/2 lb. cooked chicken, chopped
1/2 c. salsa
1/2 c. chopped parsley
10-16 tortillas
- Heat oven to 375 degrees.
- Mix dressing & flour in medium saucepan with whisk. Gradually stir in milk and bring to a boil, stirring constantly. Cook until thickened then add 1 c. of cheese, cook until melted. Reserve 1 c. of sauce.
- Stir in chicken, salsa and parsley into remaining sauce. Spoon 1/2 c. of sauce down the center of each tortilla, roll and place seem side down in a 13x9 baking dish, sprayed with cooking spray. (Mine made a 13x9 casserole and a 8x8 casserole). Top with the remaining sauce and remaining cheese.
- Bake 30 minutes or until heated through.
This is a great recipe and it's even better if you serve it with a salad on the side. Definitely a make again recipe.
